In a hotel or casino, the question is rarely about one bartender. It is about whether the property’s system for training, supervising, and coordinating alcohol service across outlets worked on the night in question. Preston evaluates that system from the records: the standards the property adopted, the training it delivered, the staffing it scheduled, and the communication between outlets and security when a guest became a problem. He has consulted to properties including the Alluvian, Memphian, Collegiate, Fenix, and Millennium hotels and the Pink Shell resort.
Preston has worked in licensed venues since 1996 as a bartender, bar manager, nightclub general manager, and director of bar operations, and has consulted to operators since 2010 through Rideout Hospitality Consulting. He holds 112 seller-server and responsible-vendor certifications across 48 states and the District of Columbia, co-authored a bartender training manual, and has given deposition or trial testimony in 20 matters across 11 states for both plaintiffs and defendants.
